Organic Hemp & Lemon Hummus
Total Time: 15 minutes
1 15.5oz can of chickpeas
¾ cup Of NATERA Organic Hemp Seed Hearts
2 large cloves garlic
¼ teaspoon grated lemon rind
6 tablespoons tahini
4 tablespoons of organic hemp oil
4 tablespoons water
1 teaspoon salt
1 teaspoon ground coriander
Paprika to garnish
1.Chop and sauté the garlic and shallot in a frying pan with a bit of olive oil.
2.Juice the two lemons in a bowl and add the garlic/onion mixture, lemon rind, tahini, hemp oil, water, chickpeas, and organic hemp seed hearts.
1.Purée the mixture until smooth with either a standard blender or an immersion blender. Drizzle in olive oil until the mixture reaches the desired consistency.
3.Add salt and ground coriander to taste.
4.Sprinkle a bit of paprika and a few extra chickpeas and hemp seeds over the top for a pop of color and texture. Consider adding a bit of za'atar, a spice blend unique to the Middle East, for an extra special treat.
5.Serve chilled and Enjoy.
