Lemon and Herb Marinated Chicken

1 tsp. ground Himalayan salted hemp seeds/ground pepper
1 tbsp. hemp seed oil or olive oil plus more for grill
1 tsp. dried thyme
½ lemon, quartered, plus 1 tbsp. lemon juice
½ tsp. crushed red pepper
2 garlic cloves, smashed and peeled
2 sprigs of fresh oregano plus 2 tsp. chopped
4 large chicken cutlets
INSTRUCTIONS FOR PREPARATION:
1.In a medium bowl, combine chicken, garlic, oregano sprigs, red pepper, and thyme.
2.To the bowl above, add lemon quarters while squeezing juice into bowl as you go.
3.Season the whole combination with Himalayan salt and pepper, then cover and refrigerate for 4 hours about 4 hours.
4.Heat grill to medium-high and lightly oil. Grill marinated chicken until cooked through, about 3-4 minutes per side.
