Roasted Butternut Squash and Pear Soup

Servings: 6 cups


  • Butternut squash (chopped and peeled): 1 large (almost 4 cups chopped & roasted)
  • Sautéed leek: 1 medium
  • Peeled fresh ginger: 2 inches
  • Sea salt: ½ teaspoon
  • Sautéed pear: 1
  • Hemp Protein Variety Case (choose your favorite flavor): ½ cup
  • Coconut milk: 3 cups
  • Cinnamon: 1 teaspoon
  • Allspice powder or (1/8 teaspoon cloves + ¼ teaspoon nutmeg): ¼ teaspoon
  • Coconut oil: to roast squash and sauté pear and leek

1.Preheat your oven to 350°F.
2.Peel butternut squash and chop it to make bite-size pieces. Lightly coat chopped butternut squash with coconut oil.
3.Put squashed pieces on a baking sheet and put in your preheated oven. Roast it for almost 30 to 35 minutes to make them tender and soft.
4.In the meantime, slice and sauté pear and leek in a skillet.
5.Take a blender and put hemp powder, spices leek and pear in blender. Blend them well.
6.Now add soft butternut squash in blend along with pear and leek and blend again to get a smooth mixture. You can add some coconut milk or water to decrease its thickness.
7.You may need 1 ½ cups of coconut milk or water to get a nice soup.
